To make Champagne, wine producers can only use three kinds of grapes; two black varieties and one white variety. The black ones are squeezed so gently, that the juice is just white. These black varieties are Pinot Noir and Pinot Meunier and they give the strength in Champagne. Chardonnay, the white grape, adds elegance to this sparkling wine. Most Champagnes are made from a mixture of these grapes, mostly 49% Chardonnay, 49% Pinot Noir and 2% Pinot Meunier. Champagne made of Chardonnay only is called Blanc-des-Blancs, and if it’s made of black grapes only, it’s called Blanc-des-Noirs. All Champagnes should be served cold. The Champagne region is located in the triangle between Luxemburg, Paris and Burgundy. Actually it’s a cluster of vineyards close to each other. In and around the cities of Reims, Epernay and Troyes is the main production of this sparkling beverage of the gods. This region depends on their Champagnes and the tourism involved.
